Pumpkin Streusel Muffins
Ingredients
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 ⅓ cups pumpkin puree
- 1 medium ripe banana, mashed
- 1 cup granulated sugar
- ½ cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
Nutrition Boost
- Streusel topping (optional):
- ⅓ cup packed brown sugar
- ⅓ cup all-purpose flour
- ⅓ cup old-fashioned rolled oats
- ½ teaspoon ground cinnamon
- 3 tablespoons coconut oil, softened but not melted
- Instructions: Stir together the brown sugar, flour, oats, and cinnamon. Add the coconut oil and mix with a fork until crumbly, leaving some small clusters. Sprinkle evenly over muffin batter before baking, gently pressing the topping into the surface.
- Egg Allergy? Use flax eggs instead.
- Don’t have coconut oil? Vegetable oil, such as canola oil, will work, too!
Directions
- Preheat the oven to 350°F (175°C).
- Liberally grease the muffin pan with coconut oil or butter.
- In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Pour the wet mixture into the dry mixture and stir together until just combined. Pour the batter into the prepared pan. Add streusel topping (optional).
- Bake for 25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs and the center springs back when lightly pressed.
