  • Streusel topping (optional):
    • ⅓ cup packed brown sugar
    • ⅓ cup all-purpose flour
    • ⅓ cup old-fashioned rolled oats
    • ½ teaspoon ground cinnamon
    • 3 tablespoons coconut oil, softened but not melted
    • Instructions: Stir together the brown sugar, flour, oats, and cinnamon. Add the coconut oil and mix with a fork until crumbly, leaving some small clusters. Sprinkle evenly over muffin batter before baking, gently pressing the topping into the surface.
  • Egg Allergy? Use flax eggs instead.
  • Don’t have coconut oil? Vegetable oil, such as canola oil, will work, too!

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Liberally grease the muffin pan with coconut oil or butter.
  3. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Pour the wet mixture into the dry mixture and stir together until just combined. Pour the batter into the prepared pan. Add streusel topping (optional).
  5. Bake for 25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs and the center springs back when lightly pressed.
