This Pumpkin Mac & Cheese puts a nutritious twist on a classic comfort food favorite. Made with pumpkin puree for added fiber and vitamin A, it’s an easy, budget-friendly meal that’s perfect for busy college students craving something cozy and delicious!

Pumpkin Mac and Cheese
Ingredients
- 8 oz pasta (I like higher-protein pasta like Banza or Brami)
- 1 cup pumpkin puree
- 1 cup vegetable broth
- 1 cup milk
- 1 ½ cups cheddar cheese, shredded
- ½ tsp garlic powder
- ¼ tsp dried thyme, optional
- Salt and pepper to taste
Directions
- Combine the Liquids: In a medium saucepan or pot, combine the broth, milk, pumpkin puree, garlic powder, salt, pepper, and thyme. Whisk until completely smooth.
- Simmer the Pasta: Stir the dry pasta noodles directly into the liquid mixture. Bring the pot to a gentle boil over medium-high heat.
- Cook Until Tender: Once boiling, immediately reduce the heat to medium-low so it stays at a gentle simmer. Cook uncovered for 8 to 10 minutes (or according to package instructions), stirring frequently to prevent the noodles from sticking to the bottom. Note: The liquid will look loose at first, but the pasta will absorb it as it cooks.
- Melt the Cheese: Once the pasta is tender and the liquid has reduced into a thick coating, remove the pot from the heat. Stir in the shredded cheddar cheese one handful at a time, mixing gently until completely melted, creamy, and glossy.
- Let it sit for 2 minutes to thicken up slightly before serving!
